I used the grey beard sneak attack method, which was really fast as well with the Thief Sign and something else I forgot that increases how quick stealth skills level, I kept resetting it every time I got to 100. As an Elder Scrolls veteran, I was surprised at how fast I was able to level. I tried this last week and can confirm it works well. There are many tricks, but the fastest I've tried so far is to grab an item using telekinesis, then fast travel to another location while grabbing (I usually did the tour Markarth-Windhelm).
